Baby back Ribs
Baby back ribs come from the parts of the ribs that are connected to the backbone, beneath the loin muscle, and are curved where the meet the spine. They're called “babies” because they're shorter than spare ribs; on the longest end, they're around 6 inches, and they taper down to about 3 inches on the shorter end. Our ribs are phenomenal and ethically sourced from East Anglia.
Pork Shoulder (Boneless)
Pork shoulder is a triangular cut from the area just above the front leg of the pig. As the part of the pig see's the most activity, it will have less fat marbling. If roasted, pork shoulder needs to be covered and have liquid in the pan for most of the roasting time. Ethically sourced from East Anglia, this is wonderful for a family dinner.
